Substitute for

Buttermilk

Acid + dairy matters more than the name. In baking, preserve the acidity that reacts with baking soda.

Milk + lemon juice or white vinegar

Best all-round
Swap
For 1 cup buttermilk: put 1 tbsp acid in the cup, then add milk to make 1 cup. Rest 5–10 minutes.
Expect
Close acidity and moisture; less cultured flavour.
Watch out
Not ideal when the fresh cultured flavour is the main point.

Plain yogurt + milk

Excellent
Swap
Use 3/4 cup plain yogurt + 1/4 cup milk for 1 cup buttermilk.
Expect
Slightly thicker, pleasantly tangy.
Watch out
Avoid strongly sweetened or flavoured yogurt.

Kefir

Easy 1:1
Swap
Replace buttermilk 1:1 with plain kefir.
Expect
Very similar tang and acidity; often the closest simple swap.
Watch out
Flavoured kefir will change the recipe.
Chef reality check

A substitute can replace a function. It cannot always recreate the original ingredient.

  • Baking is less forgiving. Acidity, fat, water, protein and leavening can all change the result.
  • Taste as you go in savoury food. Salt, acidity and sweetness vary wildly between brands.
  • For allergies, read the actual label. A suggested substitute is not a guarantee that a packaged product is allergen-free or free from cross-contact.
Why context matters

The same ingredient can be doing completely different jobs.

An egg might bind a burger, emulsify mayonnaise, add moisture to a cake or provide nearly all the structure in a soufflé. One universal “egg substitute” would be misleading.
