Dad's Fried Rice

He never measured anything. This is my best reconstruction after watching him make it a hundred times.

Ingredients

  • 600g cold cooked jasmine rice (day-old is essential)
  • 3 eggs, beaten
  • 150g char siu or cooked ham, diced small
  • 100g frozen peas
  • 4 spring onions, sliced
  • 3 cloves garlic, minced
  • 3 tbsp neutral oil
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • White pepper

Instructions

  1. 1Heat wok over highest heat until smoking. Add 1 tbsp oil.
  2. 2Pour in eggs. Scramble quickly, just barely set. Remove and set aside.
  3. 3Add remaining oil. Fry garlic 30 seconds.
  4. 4Add rice. Press and toss constantly for 3โ€“4 mins until each grain is separate.
  5. 5Add soy sauce and oyster sauce. Toss to coat evenly.
  6. 6Add peas, char siu and eggs. Toss 1 minute.
  7. 7Finish with sesame oil, spring onions and white pepper.
